The milk in your coffee comes from Søtofte, an organic and regenerative farm run by the couple Mikkel and Marie, who have 50 dairy cows and their own artisanal dairy in Central Zealand.

In summer, the cows are moved to fresh grass 2–3 times a day. In winter, they stay in a warm, dry loose housing barn with plenty of space and large outdoor areas.

The cows raise their own calves - the calves stay with their mothers for the first couple of weeks and are then cared for by a foster cow until they are 4 months old.

Around 25% of the calves remain on the farm to become future dairy cows. The rest contribute to nature conservation grazing until they are slaughtered at around 2 years old and sold as organic beef.
